The carrots make this dessert a healthier variant of the traditional carrot cake. You can dodge the fat bullet by pouring in less oil into the cake batter. Since cakes have to be a tad moist upon cooking, just use non-fat buttermilk with some pineapple thrown in the mix. Otherwise, this cake can be cooked like the traditional version.
Graham Crackers and Toppings
Graham crackers make a great kid's snacks option on their own.
